Tender Chicken Breast Salad with Goma Sauce (蒸し鶏ごまソースサラダ)

Goma (sesame) salad sauce works for many things. There are three main types of sesame in Japan; “kuro-goma”(black), “shiro-goma”(white), and “kin-goma”(gold, but I think it’s just brown..). For this dressing, I suggest to use “shiro-goma”(white) or “kin-goma”(gold).

Ingredients

  • 120g Chicken tender breast
  • 1 tbsp sake (rice wine) / 1 c.s sake (wine de riz)
  • 1 ripe tomato
  • 10cm cucumber
  • Radish sprouts (as a finishing touch)
  • *Goma sauce*
  • - 3 tbsp "shiro" iri goma (white grilled sesame)
  • - 1 tbsp white vinegar (e.g. wine, apple, rice)
  • - 3 tbsp mayonnaise
  • - 2 tsp sugar
  • - 1 tbsp soy sauce
  • - 1 tsp liquid honey

Instructions

  1. *Goma dressing (sesame dressing). Ground sesame finely, then add vinegar, mayonnaise, sugar, salt, soy sauce, shiro miso and honey. Mix well.
  2. Sprinkle a touch of salt over the chicken, add the sake over the top and cover it roughly with cling film. (DO NOT cover completely!!) Cook it in a microwave for 2 minutes. Ensure that the centre of meat is cooked well. If not, continue until it's cooked completely.
  3. While the chicken is still hot, shred it by hand into small pieces. Set aside.
  4. Cut the cucumber into fine, long string shapes. Dice the tomatos.
  5. Place diced tomato on the plate, add cucumber, then chicken. Pour the Goma dressing over the top, and finish with radish sprouts.
