Nikujyaga (beef & potato stew, Japanese-style)

・Niku = meat in Japanese, ・jyaga = jyagaimo = potato in Japanese

I’m not sure if I call this meal a “stew”. Because a stew for me is more likely meat and vegetables with very thick soup, but “Nikujyaga” is not. It’s cooked with condiments, and simmered until almost the liquid part has gone.

Anyway, meat and potato, that must be a great combination. You will love this.

Ingredients

  • 400g thin sliced beef
  • 250g potato such as for roast potatoes
  • 2 large onions
  • 1 large carrot
  • 8 snow peas
  • 200g shirataki
  • 3 tbsp soy sauce
  • 3 tbsp mirin
  • 1tsp honey

Instructions

  1. Prepare the vegetables. Peel the carrot, and cut into bite sized pieces. Peel the onion shell and cut into 8. Remove the snow pea's strings. Peel the potatos, and cut in half. Then put into a bowl of water. Drain the water, and rightly dry out the potatoes. Bring a water in a small saucepan, and boil the shirataki a few minutes, then drain the water. Cut into 5cm long.
  2. Prepare the beef. Cut the thin slice beef into 3cm strips.
  3. Place the vegetable oil in a saucepan over a medium-high heat. Add the beef and sauté until the colour almost changes, then add the potato, the onion and carrot. Continue to sauté for a few minutes.
  4. Add water until it just covers the top of all the ingredients, then bring to boil and remove any film from the surface. Add the mirin and honey, then bring down to medium heat and simmer 5 minutes coverd with a circle of baking paper directly touching the water.
  5. Add soy sauce and shirataki, then simmer until the liquid is almost reduced, but enough remains to cook the snow peas. If you want to cook in advance, turn off the heat at this stage, then continue to cook later. Add the snow peas and cook until tender(a few minutes). The liquid should be almost gone.
