Asparagus Beef Roll

Finally the local asparagus season has started. I normally wait until the local season, but this year weather has been so cold and wet, I bought some from other European countries.

This is suitable for bento too, easy cook and easy put in the bento box.

Ingredients

  • 8 asparagus
  • 400g thin sliced beef
  • 2 tbsp soy sauce
  • 2 tbsp mirin (cooking sweet sake)
  • Cooking oil
  • Salt

Instructions

  1. Break the bottom off the asparagus, and peel with a peeler around the bottom. Bring the water to the boil, add a pinch of salt, then boil the asparagus for a few minutes until the texture is hard.
  2. Spread the beef and sprinkle with a pinch of salt. Roll the asparagus in the beef, set aside with the join in the roll on the bottom.
  3. Heat a frying pan with a medium heat and add the cooking oil. Place the rolls in the frying pan, also with the join side down. Cook until the rolls start to stick. When the end of the rolls stick, turn and fry other side.
  4. When the beef is cooked, add soy sauce and mirin. When the sauce starts to bubble, toss well and mix with the rolls.
  5. Cut the rolls into smaller pieces, plate, and then pour the sauce on top.
