Tofu is quite difficult to get in Switzerland. The tofu which we have in Japan is much softer and contains more liquid. The texture is more like creme caramel (although not the taste). Sometimes people in Europe prefer to eat tofu as a substitute for meat.

This recipe is adapted for cooking with European tofu.

Ingredients

  • 250g Tofu (European style)
  • 4 slices of hard cheese (such as Gruyere)
  • 4 sheets of Nori (seaweed)
  • 4 tbsp Potato starch
  • 1 tsp Yuzu pepper paste
  • Salt
  • Oil for frying

Instructions

  1. Cut the tofu into 7mm thick slices, then split each slice like a "sandwich" but do not cut it all the way through. Wrap the "sandwiches" in kitchen paper (towel) to remove the excess moisture. Place in in the refrigerator 30 minutes.
  2. Spread yuzu paste inside the tofu-slice "sandwiches".
  3. Slice the cheese small and thin and then add it to the "sandwich". Wrap the tofu with a strip of nori and then dust potato starch on the exposed tofu.
  4. Heat a frying pan, and fry the tofu until each side becomes crispy. Serve with salt.
