Houji-cha (hôjicha) is a Japanese tea which has almost zero caffeine and is a kind of green tea. Because the leaves are roasted, it has a roasted aroma, a very mild flavour and the colour is brown. It’s often given to babies as their first tea, because of the very low caffeine content and the mild flavour. Nowadays it’s used for many desserts and patisseries as well as green tea and matcha flavour. Enjoy this different tea flavoured “purin” (pudding).
Houji-cha Purin (Houji-cha Pannacotta)

- Make 100ml houji-cha with 30g houji-cha tea leaves
- 300ml milk
- 100ml cream
- 60g sugar (if it's served without syrup, 80g sugar)
- 6 sheets gelatin
- * Houji-cha syrup
- 2 tbsp sugar
- 2 tbsp strong houji-cha
- Soak the gelatine in plenty of water.
- Make strong houji-cha tea: bring water to the boil (about 200ml) in a small sauce pan or a tea pot, add the houji-cha leaves. Put a lid on, remove from the heat and leave it for 10 minutes. Use 100ml of the hôji-cha for this recipe.
- Add milk, cream and sugar, then heat with a medium heat. Stir well and ensure that all the sugar dissolves. When the sugar has dissolved put the gelatine into the pan, and mix well. Make sure it does NOT boil.
- Pour into several little glass containers or one big container. Place in the refrigerator until it sets. Serve with houji-cha syrup.
- * Houji-cha syrup Put the houji-cha and sugar in a small sauce pan, then heat with a medium heat.
