Aubergine and Minced Beef with Miso Sauce

When I saw an aubergine in Europe for the first time, I thought it was a joke vegetable. Huge!!! Actually it was not only aubergines, most vegetable sizes seem to be huge in Europe. Hum, it might be only originally Mediterranean vegetables such as aubergines, bell peppers, courgettes… Instead of vegetables, Japanese fruits are much bigger, such as apples, peaches, grapes.. Of course it has changed a lot since I started to live in Switzerland. There is a greater variety of food now. Still, some things won’t change: the number of cheeses and chocolates! Why not, this is Switzerland!

This recipe uses “aka miso” which has a dark colour. The dark colour is more attractive for this recipe. You can use any kind of miso and adjust the sweetness and saltiness, except “shiro miso”. “Shiro miso” is too pale for this dish.
